The first digestive enzyme is encountered in the saliva of human beings. This enzyme is known as amylase. As a part of “process of chemical digestion of food”, digestion of simple sugars carried by salivary amylase in mouth is the first step.

Amylase breaks down complex sugars i.e carbohydrates into simple sugars by disrupting the chemical bonds between the saccharides molecules and thus converts it into simple forms.
