Saturated fatty acids

The fatty acid is said to be saturated if there are only single bonds between the carbons atoms. As a result, the carbon atoms are bonded to as many hydrogen atoms as possible. In other words, the carbon atoms are saturated with hydrogens since single bonds increase the number of hydrogens on each carbon.  Saturated fats come from animals and some plants.Saturated fats are usually solid at room temperature.  Examples of saturated fatty acids are palmitic acid CH₃(CH₂)₁₄COOH, stearic acid CH₃(CH₂)₁₆COOH, myristic acid CH₃(CH₂)₁₂COOH

Unsaturated fatty acids

The fatty acid is said to be unsaturated if there is at least one double bond between carbon atoms. As a result,  the chain has fewer hydrogen atoms.  They are unsaturated with hydrogens.  

There are two types of unsaturated fatty acids, i.e., monounsaturated fat and polyunsaturated fat. They're found primarily in oils from plants.

monounsaturated fat is the fatty acid with only one double bond, e.g., oleic acid (C₁₈H₃₄O₂) as the main fatty acid in olive oil and canola oil.polyunsaturated fat is the fatty acid with more than one double bond, e.g., omega 3, linoleic acid (CH₃(CH₂)₄CH=CHCH₂CH=CH(CH₂)₇COOH) as the most abundant polyunsaturated fatty acid in olive oil and canola oil.
