When you add salt as a seasoning, you make the fluid around the steak have higher salt concentration than before. Salt will increase the osmotic pressure and will pull water from nearby.  

The more salt you put on top of the steak, the higher the osmotic pressure outside the cells of the steak. If the osmotic pressure outside steak is higher than inside steak, water will start flow from cells of the steak.
