Is it hydrophobic or hydrophilic? Place the substance in water and see what happens... Does it shed all of the water immediately, or does it absorb the water...?

You can also place the substance on some paper. If it makes a grease spot (if you've ever put Cheez-its or Goldfish on your homework paper, you know what I'm talking about) then you know its a lipid. If it does not make a grease spot, you know it is NOT a lipid, so it will be a carb.
