Why did we use a mixture of ethanol and water to perform the reaction between the oil and naoh?

The reaction between oil and NaOH or sodium hydroxide is also known as the process of Saponification. The mixture of ethanol and water is completely homogenous, miscible and soluble in all proportions. A mixture of ethanol and water is used to perform this reaction of Saponification is because this mixture of ethanol plus water prevents fat from reacting with oxygen present in the air. Since this mixture is less polar than water it will help to dissolve all the non-polar fats present, making its reaction with Sodium hydroxide easier.
