How do pancakes change as they are cooked? are they changing physically or chemically?

They are in fact changing physically and chemically. Physically, they change their shape, and chemically, the chemicals inside them (which I don't want to name), are basically burning to put it into simplest words. If you really want the chemicals that are being chemically replaced and burned, just tell me.
