How did early Southwest Asian farmers meet the agricultural demands of their people?

The early Southwest Asian farmers (or Middle-Eastern farmers, because Southwest Asia = Middle East) were the first farmers in the history of hummanity. They began to cultivate crops in the Levant, around 10,000 BCE.

They met the agricultural demands of their people by focusing on those crops that were easier to grow, and that provided a more reliable source of calories, like wheat, and by taking great care of those crops, which was what made them shift from a nomadic to a sedentary lifestyle in first place.
