Some reasons why not being accepted into universities with great performance are for example trying to meet every expectation. You need to try and give them a reason in why they should accept you not being the perfect candidate. If people just did everything the University wanted you to do then where is the diversity in that? They want something new and fresh not just grades and credits. They want people not robots. So when applying into a university and having an interview don't answer the questions with what you think they want to hear, answer them with what you think and believe. No one is perfect and everyone has their own shine.
