How does the "open universe theory" differ from the "closed universe theory"?

In the "Open Universe Theory" it says the universe expands forever, matter will spread out, new stars will stop forming, and old stars will die out. In the "Closed Universe Theory" it says the universe will slowly come to an end and stop and collapse in.
