He lets his humanity go by eating trash staying in dark places and hiding. Basically letting his inner bug control him. Gregor changes throughout the story. He dies at the end and you see his family is free from him riding in a car in the country at the end. This shows that his identity wasn't that important to his family in the first place. He was the breadwinner. He struggles with not being human by living on the roof that he scares his mom. They even move out his furniture he thinks to accommodate him but that's not the case. After a while, Gregor can only eat trash because his taste has changed.
