When fluids of different densities interact the less-dense fluid will rise above the denser fluid. a similar phenomenon occurs with plate interactions. when two plates of the different densities collide how might the density of each plate affect which plate is pulled beneath the other?

The denser plate will be pulled beneath the other.

Similar to the fluid motion,which the less dense fluid rise above the denser fluid,the denser plate, which is usually the oceanic plate will be pulled beneath the less dense plate,namely the continential plate is pulled beneath when collision occurs.

The collision occurs in destructive/convergence plate boundary and the subduction of oceanic plate will cause the formation of ocean trench and volcanoes.
