Which amendment protects any rights that are not specifically mentioned within the constitution or the bill of rights?

Both Amendments 9 and 10 deal with protecting rights by limiting the power of the national government.  Basically, Amendment 9 says that the rights enumerated in the Constitution should by no means be taken to be a complete list.  Amendment 10 says that the powers given to the national government in the Constitution is the complete list.
