For me it could be 2 options:

a. She's hiding a secret

b. She is just not comfortable with someone going through her stuff

It is probably b, and thats ok people are different and some just dont feel comfortable with people using and going through their things. If this is such a dealbreaker, you should talk to her about it and be open, try to help her earn your trust and maybe she'll be more comfortable with you going through her stuff. You should take it slow though
