2-If a molecule is moving fast enough and at the surface of the water, it will escape into the gas phase. That’s evaporation. The warmer the water is, the more molecules have the energy necessary to escape. So hot water evaporates faster than cool water, all other factors being equal.

If the air around it is warmer than the water will set to room temperature making the boiling process take less time
