Civilizations want to expand because they need more room for stuff like improvements. In order to do that, they need to conquer other civilizations in their way. With bigger civilizations comes new influence and larger amounts of power. I do think that not all expansions lead to conflict. Some civilizations that may be conquered aren't ready to fight and just go down.
