Why can the enzyme maltase, which breaks down starch into the sugar maltose, not also be used to break down the sugar sucrose? a. maltase is a polar molecule and sucrose is a non-polar molecule. b. sucrose is an enzyme too, and an enzymes do not work on each other. c. sucrose has a different shape then starch and therefore does not fit the enzyme maltase. d. maltase is not strong enough to break the bonds in sucrose.! !
